Here are a few things which come to mind: 1. Ability to customize the control centre by adding, removing or reordering items 2. Ability to perform a 3-finger tap on an image like a photo or something on Facebook and getting a description of the picture (this is work in progress) and if there is text on the picture usually getting OCR done on said text 3. Ability to do screen recordings which can come in very handy if you want to demonstrate something like a short-coming in an app to a developer etc. 4. Further improvement on the ability to move apps as you can now select multiple apps and drag them all at once or create a folder with them 5. Emergency S.O.S feature which you can configure so that if you press the power button quickly 5 times the phone calls 9 1 1 after a delay which is there so you can cancel if you have done this accidently which by the way is hard to do. 6. If you use Apple Pay and live in the United States you will fairly soon be able to send money to a friend or family member who also has an iPhone. Hopefully this comes to Canada soon since for me this is a very nice feature. 7. Greatly improved file management via the new "Files" app which combines files from Dropbox, OneDrive, iCloud Drive etc. in a single app 8. The awesome new american female SIRI voice which sounds great as well as a slightly smarter SIRI 9. More options to customize Voiceover such as pitch control, hearing a tone for upper case letters instead of "Cap" 10. The ability to auto-answer calls, this could be handy if you are doing something where you don't want to touch the iPhone but any calls which come in you would like to answer. Turn on auto answer and the phone rings once (you can adjust the time) and then the call is automatically answered.
There are of course security improvements as well, I think waiting for iOS 11.1 which should come out in a few weeks or maybe a month won't hurt and there are a few good Voiceover improvements in that first single dot update as some people call it. To not upgrade because you are using an old 32 bit app which the developer isn't updating is just postponing the inevitable.
