Hi. In the Uber app, go to the Menu button in the upper left, tap payments, and then there should be an add button to add a payment method. When scheduling a ride, when you get to the screen summarizing your ride and payment, double tap the Apple Pay button, and then that shows a list of the entered payment options you can choose from. As for setting it as the default, I dont' know how to do it directly, but if you choose your credit card as the payment preference, then Uber will continue to use the credit card until you change it to something else.
