If the book is marked up correctly, the chapters are probably headings. To the right of the play button is the navigation menu. Touch that, and flick down until it says heading, or chapter, depending on the book. Then, touch the play button again. Each flick down will now jump ahead to the next heading or chapter. If the book has multiple heading levels, there should be an option near the top right when you double tap on the headings, bookmarks and highlights button that will allow you to adjust the heading levels shown.
