Between two Apple devices you can use iMsgs to send texts. This uses your network and Apple servers. These messages will go out over your network, which will be wifi if you're on wifi and cellular otherwise. It does not use your text messaging plan.

You can also use SMS text messages. This is what you'll be using if you're talking to a non-Apple device. You can also configure the Messages app to use SMS text messages even between two Apple devices. This won't use your network, wifi or cellular, but instead will use your carriers text messaging plan.

Hi all,
I am perplexed about how iMessage works. A friend of mine is in the US at the
moment. He tells me that global roaming is not working so he is unable to use
his phone for text messages or phone calls and has no internet access. On spec
this morning I sent him an iMessage that he sent me one in reply. I thought the
iPhone used either WiFi or phone to send the message. Please could somebody
explain. how this works?
Thanks as always for the help.
Max.
