I think we have to remember that this is one example where Apple probably considers more the average TV user which of course will not be a blind person. If somebody is serious about good sound they will either have a good Soundbar with surround speakers and Subwover or a surround sound receiver which is connected to the various speakers (front left/right, centre, rear and subwover). Apple probably also assumes that people will use their Apple TV with the TV turned on so even if the HDMI of the Apple TV is connected directly to the TV, you will then have a soundbar or speaker setup connected to an optical output on your TV and if you have a receiver it is likely all your sources (satellite/cable, DVD player, Apple TV etc.) are connected to HDMI inputs on your receiver which then in turn is connected from its HDMI output to the TV. I still agree that the optical output was nice even though I never used it, but if somebody wants to play Apple Music from the Apple TV then they may even want to turn off the TV after selecting what they want to hear. Anyhow, there are still the HDMI to analogue converters which would allow you to hook up an Apple TV to even an old analogue receiver or amplifier.
