Hi Matthew, if you send a message to someone, your own message is not taken 
into account when the phone is looking for new messages. So If the Messages app 
is reporting "1 new message", it's definitely an incoming one. A message is 
only read when you've actually opened the thread and swiped to the message.
Yes, you can rename a conversation if you wish, but by default it will be named 
with the person you're texting. whether you or the person you're texting is the 
last person in the thread at any time has no bearing on what the conversation 
is called.
