That was my suggestion as well. My understanding is that math will display in Nemeth by default, but for typing, your best bet is UEB. I suppose you could also use computer braille, but UEB seems easier. I realize that is a frustrating answer, as it is another code to teach the student. I'd give Apple Accessibility a call if I were you. Explain the situation and ask what they would recommend.
