from man 8 vdr:
-v dir, --video=dir 
              Use dir as video directory.  The default is /srv/vdr. 

If you are using the RPM provided by Fedora Extras, you can change this 
in /etc/sysconfig/vdr, there should be a line starting with 
VDR_OPTIONS.

But why don't you just create /srv/vdr?
