Indeed, right now when you edit in inline mode, you get the default editor for 
your user (configured in your user profile), which is the WYSIWYG editor by 
default. And the issue is that currently that WYSIWYG editor doesn’t display 
the “Source” button in the toolbar by default, making it impossible to switch 
to wiki syntax.

We have a jira issue for this at http://jira.xwiki.org/browse/XWIKI-9598

So, right now you have several options:
1) configure the Text editor in your user profile: 
http://extensions.xwiki.org/xwiki/bin/view/Extension/User+Profile+Application#HEditPreferences
2) use the object editor as you suggested.
3) apply the workaround suggested in http://jira.xwiki.org/browse/XWIKI-9598
4) wait for the new ckeditor integration (see 
http://extensions.xwiki.org/xwiki/bin/view/Extension/CKEditor+Integration). Or 
configure it to replace the default editor, see 
http://extensions.xwiki.org/xwiki/bin/view/Extension/CKEditor+Integration#HReplacetheDefaultEditor
