Can anyone point me to a document detailing how to replace Tomcat's

Something analogous to this doc I suppose:
http://tomcat.apache.org/tomcat-6.0-doc/logging.html#Using_Log4j
but for logback?

You'd need to implement JULI for logback. I'm not aware of any such
implementation.

But logback can implement log4j, which Tomcat can use (if my admittedly naive understanding is correct)?

Thanks.
