Candidate for these settings (if configured through best practices) is bin/setenv.sh. If it's not there, it might be environment variables that are already present in your shell (in that case you can check them by echo $CATALINA_BASE and echo $CATALINA_HOST. Otherwise check any other file that differs from tomcat's downloaded version.
