Is Tomcat and/or the WAR file using a local filesystem?
The only things that will trigger an undeploy are:
- if the WAR file disappears
- if the WAR file changes its timestamp
If any sort of network file system is in use, I'd look at what that is
doing around the time of the undeploy. I'd also look at the timestamp of
the WAR file before and after the undeploy/deploy.

I would check /etc/cron.weekly for a restart and your logrotate configuration
to be sure there isn't a restart
