I highly recommend using Olaf's suggestion of separating the "concept" of the Tomcat installation directory (/opt/tomcat or /opt/tomcat/latest if you prefer) with the actually location of the un-tarred Tomcat distribution (e.g. /opt/tomcat/apache-tomcat-x.y.x). I would also highly recommend that you take a look at the RUNNING.txt file that comes with Tomcat with particular attention to the "Advanced Configuration - Multiple Tomcat Instances" section.
