you can manipulate the user that executes a service with the windows service tools, search around a little on microsoft.com and you will surely find it

you're better off using a different wrapper than the one that comes with Tomcat,
this one allows for thread dumps and more customizations

In the wrapper.conf file you can change the name for your NT service
