I just wanted to say thanks to everyone for the help. I ended up downloading Tomcat directly from the Tomcat site and got that up-and-running super fast.
In the end, I opted to not worry about spoofing/vhosting anything. Maybe down the road, but for right now I've been fine with symlinking my GitHub Tomcat projects to the WebApps folder … that works great! I love how quickly Tomcat starts up compared to the Bitnami Tomcat/Apache2 package. Anyway, thanks a bunch for the help everyone!
