Yes you will ...
doFilter(...) {
  // log and set other timing variables
  try {
    chain.doFilter(...)
  } finally {
    /*
       servlet done executing - log some more
    */
  }
}

If the filter is invoked on includes and forwards too - you can also get more granually logging.
