If you want to utilize Servlet spec 3.0 or JSP spec 2.2 then use Tomcat version 7.0.39. This is compatible with Java 1.6.
If you prefer or are constrained to using the older servlet or JSP specifications, then use Tomcat version 6.0.36. If you don't know or don't care, then my recommendation would be to use the latest stable version of Tomcat 7 because of the bug fixes and security enhancements. Both Tomcat 6 and 7 are solid.
