To add to what others have said:

You can even have the same version of Tomcat installed multiple times
on the same machine: they won't interfere with each other (other than
port conflicts as others have mentioned).

If you are using Microsoft Windows and want to run Tomcat as a
service, you will have to give the services different names so that
they do not conflict with each other. Similarly on *NIX, if you want
to use service-startup-scripts (which most *NIX platforms use, like
/etc/init.d, etc.) then you will need to make sure you take into
account the fact that you have more than one Tomcat that needs to be
launched.
