Currently, 5.0.15 is a good one to start with. You can get a head start on developing now, and when the production version comes out your changes should be minimal to none, depending on how deep you get into it. It seems class and package name changes are done, and that was the most disruptive change that I've had in the last few months --it was fixed with a find/replace.
Don't forget to look at the 3rd party libraries that are being developed along side T5 versions. In particular, I make use of Sven Homburg's T5 Components.
