You should ask in a hMailServer list or forum because the answer is likely to be very specific to hMailServer. Personally I prefer the training folder method, SA keeps hash-based message identifiers so it knows how each mail has been trained, which make its all very simple, but training from folders relies on either standard mailboxes or directories containing individual emails. hMailServer uses a combination of individual files and an SQL database, and I suspect the mapping of emails to mail-folder is in the database rather than a directory structure.
