This will depend on the OP business needs, but a poor man's version of graylisting is to just delay deliveries unconditionally for a couple of minutes. (I use 2 minutes). If you do this in the MTA make sure the delay is before SA in the processing pipeline. This will allow time for RBLs and collaborative claeringhouses like Razor to see the spam before SA on your system checks it.
