No, just grabbing a channel once will not cause sa-update to keep it up to
date on its own afterward.

"spamassassin" script in /etc/cron.daily but I didn't see anything in it that 
was specific to the update channels.

You can also put the info in a couple of files. That makes it a bit easier to manage if you are updating more than one or two channels.

My update command looks like this:

sa-update --channelfile channels.txt --gpgkeyfile gpgkeys.txt

(I actually have the full paths listed there. I truncated it for readability)

channels.txt looks like this:
updates.spamassassin.org
sought.rules.yerp.org
khop-bl.sa.khopesh.com
khop-blessed.sa.khopesh.com
khop-general.sa.khopesh.com
khop-sc-neighbors.sa.khopesh.com

gpgkeys.txt looks like this:
