No, just grabbing a channel once will not cause sa-update to keep it up to
date on its own afterward.

Does sa-update need to be told which rulesets to download? Debian/Ubuntu have a
"spamassassin" script in /etc/cron.daily but I didn't see anything in it that
was specific to the update channels.
You can also put the info in a couple of files. That makes it a bit
easier to manage if you are updating more than one or two channels.
My update command looks like this:
sa-update --channelfile channels.txt --gpgkeyfile gpgkeys.txt
(I actually have the full paths listed there. I truncated it for
readability)
channels.txt looks like this:
