To evade Bayes filtering. It's usually a large body of text taken from
a book or something similar, so a text analysis makes the whole
message look less spammy overall.
There's a funny thing about that; published prose and non-spam email do
not actually look very similar.
It's also noteworthy that most of the spammers who do that use the most
disreputable infrastructure of the net. It is very rare from
quasi-legitimate (ESP) or mixed (retail mailbox provider) mail sources.
