I'm afraid it's unclear to me what your practical goal is, even at a very high level. To the extent this may be an underdocumented area of plugin development, my guess is that that's because it's mainly useful in highly-specialized use cases. Stock/default caches (filterCache, queryResultCache, etc.) should suffice for the vast majority of use cases.
Do you have a specific reason to suspect you could _benefit_ from a custom cache, or are you simply trying to better understand custom caches in order to determine whether you could benefit from using them? Assuming the former, it would be really helpful to know more about what specifically you're trying to achieve. If the latter, I honestly think it's not worth investigating this area in the absence of a more clearly-defined need.
