I've pushed a fix yesterday regarding this issue. Can you try the latest nightly build?
I've installed the SOGo 5.5.0.20220203-1 packages from Inverse's nightly repository for Debian Buster. With this version, the problem with the steadily increasing number of DB connections seems to be gone.
