Then, for someone to be able to add/edit/delete events to this calendar - but edit/delete ONLY events that they themselves created, all they need to do is 'invite' that calendar user to the event...

Done. The event shows up (is auto-accepted) on the Shared calendar for all users to see, and only the user who created the event (or a user who has full control) can edit/update/delete it.

Hmmm...

I just realized that this is weird...

If someone sends *me* an invitation, it isn't accepted onto my Calendar unless/until I click the 'Accept' button, right?

If so, then why are these others auto-accepted (they are, I have at least confirmed this)?

I guess I'll have to test this by getting someone to send me an invite then just logging into the SOGo web and check my calendar from there and see if the event is showing up...?
