You have to set it in "Preferences" --> "IMAP Accounts". Select the desired Account in the left part. Then edit the corresponding signature by clicking on the link right of "Signature:" in the right part. In the upcoming frame you can type your signature, then stop editing by clicking on "OK". Be sure to save your new setting by pressing "Save and Close", as "OK" is not enough!
