I am not a SOGo expert by any means. And I am in the same boat as you. My IMAP users authenticate separately from my AD domain users. If the email password is the same for both accounts, SOGo email works out of the box.

From the searching and reading I have done, you cannot change the password for the default email account.

However, in .GNUstepDefaults you could set:

SOGoMailAuxiliaryUserAccountsEnabled = YES;

Yuu can then log on to SOgo

Click the PREFERENCES button

Click on the IMAP Accounts tab

You'll be able to hit the + on the lower left and add another imap account.

Just set your server settings and username and password and you'll be good to go.

The default account will still be listed and will not work... but at least you can get your email now.
