That is difficult to say because it depends on the usage pattern of your users. Please note that SOGo is quite light on CPU usage. Generally the bottlenecks will be the surrounding services.

For example, out of your 2000 accounts, it's unlikely that they will use the calendar or the webmail at the same time. In reality, there maybe 100 or 200 simultaneous users. For that configuration, a 4-core Xeon or G5 configuration with 4Gb and 10 processes of SOGo should be just fine...
