It's clear that the choice should focus on an open-source project.
Indeed, Matrix or Mattermost are viable options. However, I believe
using an already managed instance and opening one or more channels on an
existing platform is a better option. This could include having a web
front-end for quicker access. Therefore, logically, I would lean more
towards a Matrix channel on matrix.org.
