I amazed at how xeappy the webs sites are about documenting the procedure to 
install on a Mac.  AI on Google says this:

To install Apache OpenOffice on a Mac, download the disk image (DMG) file from 
the official Apache OpenOffice website, open the DMG, and drag the OpenOffice 
application icon into your Applications folder. If you encounter a security 
warning about an unverified developer, you will need to navigate to your Mac's 
System Preferences > Security & Privacy > General tab, click the lock icon to 
make changes, and then select Open Anyway to allow the application to run.
