Set File Associations to tell Windows which application to use to open and edit 
a file.  Right click on each type of OpenOffice file you use, and from the 
popup, select to use OpenOffice to open that file.  I think you may have to use 
"other applications" (words to that effect) at he bottom of the list, and 
navigate to find OpenOffice - it may be soffice.exe.

I do not use current Windows, so cannot give more precise instructions.
