It transpires that the questioner was using fonts that are supplied with macOS only in regular style, not bold (or italic). See https://en.wikipedia.org/wiki/List_of_typefaces_included_with_macOS . And the way that OpenOffice fudges bold from regular fonts creates an outline that stays black when the underlying character is coloured.
