macOS Sierra, like all version of Mac OS X starting with Lion do not include Java an any update to a newer version removes the legacy Apple version of Java. The legacy version of Java can be downloaded from Apple: https://support.apple.com/kb/DL1572?locale=en_CA

The database portion of AOO and the mailmerge functions require Java. It is best to install the current version of Java as well as the legacy version. It is available from http://www.oracle.com/technetwork/java/javase/downloads/jdk8-downloads-2133151.html
