To begin tracking (recording) changes, click Edit > Changes > Record. To show or hide
the display of changes, click Edit > Changes > Show
Please note that there is also an option to compare documents, this
becomes handy if the other
party hasn't recorded his changes. Also note that you can change the
appearance of the changes
under Tools --> Options --> OpenOffice Writer --> Changes
