Have you used any spreadsheet before? AOO works like most of the others including excel.
For example, create a new spreadsheet. On the far left you will see a column of numbers representing the rows and across the top you will see a row of letters representing the columns. If you do not see these features go to Menu->View->Colum & Row Headers and turn them on. To insert a row, place the selection (i.e. "click") in the column of numbers on the row where you want to insert a row. Right click on the column on numbers and select "insert rows". Inserting columns works similarly. Pretty SIMPLE! Additionally, you will find a lot of helpful information by using the Menu->Help->OpenOffice Help item. In my experience the OpenOffice help is the most useful of any application I have ever used. HTH.
