I'm not sure if there is such documentation, but you get that info from 
the POM description itself:

http://maven.apache.org/reference/project-descriptor.html
In other words, whatever is on that XML can be accessed throughout 
Jelly's EL.

For instance:
   <build>
       <sourceModifications>
           <sourceModification>
               <className/>
Could be accessed as : 
${pom.build.sourceModifications.sourceModification.className}
