No, it's not an EJB and it's not an Java EE application.  It's a client-server 
application using RMI. 

I somehow need to get 2 jar files out of the same project.

JAR#1 will have all the class files from the project. This is the RMI Server.

JAR#2 will have just a subset of those from the JAR#1.  These are the classes 
which the RMI Client needs.  I want to pull JAR#2 into the RMI Client 
application as a dependency.  

This is pretty simple stuff but the Maven plugin docs are very limited and I 
can't figure this out.  I need a real example of how to do this.
