Assuming you mean the accessibility icon. This is how I do it.

Edit /usr/share/gnome-shell/js/ui/panel.js and comment out the 'a11y':
imports.ui.status.accessibility.ATIndicator line. 

...
//    'a11y': imports.ui.status.accessibility.ATIndicator,
...
