For anyone still following this thread, using the hostname command to change
the hostname does not result in a permanent change. As per the man file, it
only changes it until the next reboot.

SET NAME
When called with one argument or with the --file option, the
commands set the host name or the NIS/YP domain name.
hostname uses the sethostname(2) function, while all of the three
domainname, ypdomainname and nisdomainname use set‐
domainname(2). Note, that this is effective only until the next
reboot. After reboot original names from /etc/hosts
are used again.

It appears to me that the only way to truly change the hostname of a machine
is to edit /etc/sysconfig/network. But I might be wrong.
