Yes, I know.  I think *you* have failed to comprehend my responses,

I haven't mentioned Gnome network configuration, just configuring the
network.  Looking at network manager, it offers the opportunity to set
network parameters, and tie them to a specific device.  The defaults,
though, takes everything out of your hands.

It also isn't the only way to set up NAT.  You can do iptable rules,
for instance.  I used to do that many years ago on dial-up, essentially
doing the same as the original poster instead of a broadband device. 
It was certainly more obedient to my configurations.

Whichever way things are done, my suggestion stands.  If you don't like
automatic random configuration, go fully manual.
