If secure boot is enabled, you need to encrypt the swap partition, but I
haven't had a chance to test that yet.

Is there a benefit to having secure boot enabled?

It's a security thing. As long as it doesn't interfere with my use, I just
leave it at the default enabled.

Got it, but what are the risks that I run by disabling it?

If you don't have any concerns about the physical security of your computer and you're only running Fedora, then very little.
