Congrats on progress! Manually editing files is what I have done when needed. Edit /boot/efi/EFI/fedora/grub.cfg, /boot/grub2/grub.cfg, /etc/kernel/cmdline, and /etc/fstab to make sure everything is using the correct UUIDs, then get everything booted (manually addressing issues as required), and then rebuild initramfs.
