Plus the gui would be useless unless it had all of the knowledge of
all types of fses and what options were valid.

And coding that into a fstab gui program correctly seems like a
massive undertaking with all of the details. so it would likely be a
mess.

I saw a gui to manage /etc/groups years ago (pre-linux), it let you
add duplicate groups (diff name, same id) but then it let you select
only the 2nd name/id but deleted by id so deleted the first/wrong one
and left the 2nd one.  So with its simple design it was actually worse
than useless.
