VNC used to display a GUI running in the VM on your local PC.  If you
only use a text terminal via ssh then VNC is not required.  If you do
need graphics there are a number of systems that run a special web
server in the VM to display graphics in a browser on your PC.

Examples are Rstudio Server and Jupyter Lab.
