The percentage is relative to one core. A multi-threaded application can use up to 100% * the number of cores you have.

I assume this is something I need to install? (in which case wouldn't there be a promt for soething "missing" in nautilus?...and if it WAS there seeing as how this wasn't somethign that was always happening...how'd it get REMOVED when I didn't uninstall or remove anything except the apps I described earlier!?)

You haven't installed the Python extension support and that's fine.

As someone else suggested, check the journal to see if there are any messages referring to Nautilus. Also, try running "nautilus" in a terminal window to see if there are any messages there.
