What makes you think that CentOS would be different? It uses the same installer. Here's the screen where you can choose to set (or not) root's password for the "regular" installer https://linoxide.com/wp-content/uploads/2014/07/configuration-during-installation.png Fedora's Workstation installer doesn't prompt for the creation of a root password and there's no reason to think that the RHEL/CentOS 7 does unless the no-root change hasn't been backported from Fedora. It's not a big deal ("noxious?!").
