In the context of alsa, unplugged means there are no filters being used (plugins). The tab to set it permanently is under output. After you have changed the selection under configuration, go to output and click the little green checkmark for the device you've selected. That should set it as default permanently. All that said, it sounds like something strange is happening on your system. It might be innocuous, and it might indicate a problem. Try the above and see if it works.
