I've done that plenty of times, as fdisk is simple enough to use, and it's simpler to boot off one disc, than go through two, to do an installation. All you have to do is switch to a console BEFORE the install disc gets up to the disc partitioning part. Then you just used the install disc's partitioning controls to choose which partitions to use, without modifying/formatting any.
