Hi, Strimzi doesn't have any official schema registry. The same Strimzi registry operator you pointed is not an "official" Strimzi project anyway. Said that, the Strimzi community is happy with several schema registries like the Confluent one and Apicurio. If you want to get more insight from people and their experience maybe you can join the Strimzi CNCF slack channel (https://slack.cncf.io/) and ask.
